PUFF PASTRY

INGREDIENTS:
2-70 g butter
3- 8 g salt
4- 3 to 4 drops of vinegar
5-200 ml of water
For tourage:
340 g butter, which is one half of the total weight of distemper
The flour for fleurer
Mix all ingredients by hand or the robot

HUNGARIAN FRUIT ROLL

INGREDIENTS:
1-Pie dough;melted butter;
2-raisins;chopped apples;
3-nuts;shredded citron;
4-brown sugar;cinnamon;
5-grated zest of 1 lemon;
6-wine sauce;
PREPARATION:
1-Make a pie-dough.
2-Roll out and spread with melted butter, raisins,currants, chopped apples, nuts and shredded citron.
3-Cover well withbrown sugar and sprinkle with cinnamon and the grated peel of a lemon.
4-Roll up the dough. Lay in a buttered baking-pan. Rub the top well with melted butter and let bake until brown.
5- Serve with wine sauce.

RUSSIAN PANCAKES
INGREDIENTS:For the pancake mixture:
1-110g/4oz plain flour sifted;
2-pinch of salt;
3-2 eggs;
4-200ml/7fl oz milk mixed with 75ml/3fl oz water;
5-50g/2oz butter.
To serve:caster sugar;
lemon juice;
lemon wedges,anchovies;caviar;shallots;butter.
PREPARATION:
Make a pancake batter and fry in thin cakes. Then spread them with a layer of anchovies, butter and a layer of caviar. Sprinkle with minced shallots, cayenne pepper and lemon-juice. Roll up and serve as hot as possible.

BADEN STEWED LENTILS

1-1/4 of lentils;
2-2 tablespoons of butter;
3-1 chopped onion;
4-1 tablespoon of flour;
5- some vinegar;salt;pepper;
6-boiled sausages;
PREPARATION:
1-Boil 1 quart of lentils until tender; then heat 2 tablespoonfuls of butter.
2- Add 1 chopped onion and stir in 1 tablespoonful of flour until brown; add some cold water mixed with vinegar.
3-Let boil and pour the sauce over the lentils.
4-Season with salt and pepper, and serve with small boiled sausages.
5- Sprinkle the top with bread-crumbs fried in butter until brown.

NORWEGIAN FISH PUDDING
INGREDIENTS:1-large cooked fish;
2-2 beaten eggs;salt & pepper;
3-2 tablespoons of cream;
4-1/4teaspoon of paprica;bead c rumbs;
5-1 tablespoon of butter;
6-chopped parsley & onion.
PREPARATION:
1-Remove the bones from a large cooked fish and chop to a fine mince.
2-Mix with 2 beaten eggs, 2 tablespoonfuls of cream, 1 tablespoonful of butter, season with salt, black pepper and 1/4 teaspoonful of paprica.Beat well together with some bread-crumbs;
3-Fill a mold with the pudding and let steam one hour;
4-Then boil the sauce in which the fish was cooked, add 1 tablespoonful of butter, chopped parsley and chopped onion.
5-Season highly; boil and serve with the pudding.Garnish with prawns.

CUP CAKES WITH BUTTER

1- 500 g flour T45
2- 250 g butter
3-250 g sugar;
5- 1 c c vanilla liquid
6-1 packet of yeast chemical ;
To baste: 1 egg + a little water
PREPARATION:
1- In a large bowl combine flour, yeast and sugar.
2- Add butter, cut into small dice.
3-Stir in egg yolks, vanilla liquid, mix until a smooth paste.
4-Book this dough in the refrigerator at least 1 hour (can be prepared the dough the night before).
5-Roll out the pastry and cut different shapes with cookie-cutter.
6- Little hint: spread the dough between 2 sticks of wood (from 3 to 5 min thick) that will have a much lower regularly.

ALMOND TART

INGREDIENTS:
Dough broken:
1-250 g flour;
2- 125 grams of butter,;
3-1 egg yolk;
FILLING:
1- 2 eggs,;
2-200 ml;
3- 50 g sugar,;
4-25 g flour,;
5-50 grams of ground almonds ;
6- sliced almonds;
PREPARATION:
1-Prepare the dough and let stand in the cold
2- Butter a pie pan ;
3-Prepare the dough with all the ingredients;
4- Roll out the dough and fill the mold ;
5- Peel the apples and cut into quarters ;
6-Cut each finely and put on the pie shell ;
7-Pour the flan mixture and sprinkle with almonds éffilées on top;
8- Bake in preheated oven at 180 ° C .
9-Sprincle with icing sugar & serve.

DEUTCH EGGS

1-eggs;butter;
2-sliced onions;
3-salt;red pepper;
4-lemon juice.
PREPARATION:
1-Heat some butter in a pan; then break in as many eggs as needed and fry them;
2-Add some sliced onions.
3- Remove the eggs to a platter;arrange the onions on the eggs; sprinkle with salt and red pepper and pour over some lemon-juice.
4-Serve as hot as possible on toast.

FISH A LA MARSEILLES

1-fish;
2-salt;parsley;pepper;
3-2 gloves of garlic;
4-2 bay leaves;
5- 2 sliced onions;
6- 1cup of tomatoes;butter;
7-toast;
8- white wine;
9-1 tablespoon of sugar.
PREPARATION:
1-Cut two kinds of fish into slices; season with salt.
2- Mince 2 cloves of garlic, 2 sprigs of parsley, 2 sprigs of thyme and 2 bay-leaves very fine.
3- Add a pinch of pepper.
4-Roll the fish in the spice. Then fry 2 sliced onions in butter; add 1 cup of tomatoes, the juice of a lemon and 2 cups of water.
5-Let boil up. Add the fish and let boil until done.
6- Remove the fish to a platter. Add a cup of white wine to the sauce and 1 tablespoonful of sugar.
7- Boil up and pour over the fish.
8-Serve with toast.

DUTCH SWEET POTATO PUFF

1-Peel and boil 3 sweet potatoes in salted water until tender; then mash well with 3 beaten yolks of eggs, 1 cup of milk, 3 tablespoonfuls of butter, 2 tablespoonfuls of sugar, a pinch of nutmeg and lemon-juice.

COD FISH A LA LYONNAISE

1-Cut cold boiled codfish in pieces;
2- Boil 8 small onions until soft; heat 2 tablespoonfuls of butter.
3- Add the boiled onions, 2 small cold sliced potatoes, the codfish and 1 cup of milk;
4-Sprinkle with pepper.
5- Cover and simmer ten minutes and serve hot.

SPAGHETTI ITALIAN

1-1/2 pound of spaghetti;
2-1 tablespoon of butter;
3-1/2 pound of grated cheese;salt;pepper;
4-1 cup of milk;
PREPARATION:
1-Boil 1/2 pound of spaghetti until tender.
2- Drain.
3-Heat 1 tablespoonful of butter, stir in 1/2 pound of grated cheese, salt and pepper.
4- Then add 1 cup of milk; let boil and pour over the spaghetti.
5- Sprinkle with salt, pepper and grated cheese and let bake in the oven until done.
6-Serve hot with salad.

DUTCH BAKED MACKEREL

1-Mackrel;
2-pepper.chopped parsley;
3-fried bread crumbs;
4-cream;
5-some butter;
6-couscous or potatoes
PREPARATION:
1-Place the mackerel in a baking-dish; sprinkle with pepper and chopped parsley.
2- Cover with fried bread-crumbs and bits of butter, and moisten with cream.
3-Bake until brown on top
4-Serve hot withs tewed potatoes or couscous.
