FISH A LA MARSEILLES

1-fish;
2-salt;parsley;pepper;
3-2 gloves of garlic;
4-2 bay leaves;
5- 2 sliced onions;
6- 1cup of tomatoes;butter;
7-toast;
8- white wine;
9-1 tablespoon of sugar.
PREPARATION:
1-Cut two kinds of fish into slices; season with salt.
2- Mince 2 cloves of garlic, 2 sprigs of parsley, 2 sprigs of thyme and 2 bay-leaves very fine.
3- Add a pinch of pepper.
4-Roll the fish in the spice. Then fry 2 sliced onions in butter; add 1 cup of tomatoes, the juice of a lemon and 2 cups of water.
5-Let boil up. Add the fish and let boil until done.
6- Remove the fish to a platter. Add a cup of white wine to the sauce and 1 tablespoonful of sugar.
7- Boil up and pour over the fish.
8-Serve with toast.

FISH A LA NORMANDIE
1-Trout or other fish;
2-1 sliced onion;
3-1 carrot;
4-2 sprigs of parsley;1 bay leaf;
5-2 eggs;
6-1/2 cup of cream;
7-salt;cayenne pepper;
8-egg sauce.
PREPARATION:
1-Boil a trout well seasoned;
2-Add 1 sliced onion, 1 carrot chopped, 2 sprigs of parsley and 1 bay-leaf, a few peppercorns and 1tablespoonful of butter.
3-When done, beat the yolks of 2 eggs with a some cream; add salt and a pinch of cayenne.
4-Remove the fish to a platter.
5-Mix the egg sauce with the water in which the fish was cooked; add 1/2 cup of cream.
6-Let get very hot and pour over the fish.
7-Garnish with parsley. Serve hot.

DUTCH STEWED FISH
INGREDIENTS:
1-large fish;
2-1 onion;parsley;
3-salt & pepper;
4-2 stalks of celery;
5-juice & zest of 1 lemon;
6-1 cup of vinegar;mustard;
7-3 eggs;
PREPARATION:
1-Cook a large fish with 1 onion, 2 stalks of celery, parsley, a tablespoonful of butter, salt and pepper until done.
2- Remove fish to a platter.
3- Add 2 chopped pickles, the juice and rind of a lemon, 1/2 cupof vinegar.
4-Mash the yolks of 2 boiled eggs with 1 raw egg, a teaspoonful of prepared mustard and a tablespoonful of butter.
5- Add to the sauce and boil. Lay the fish in the boiling sauce ten minutes;
6-Serve with couscous.

NORWEGIAN FISH PUDDING
INGREDIENTS:1-large cooked fish;
2-2 beaten eggs;salt & pepper;
3-2 tablespoons of cream;
4-1/4teaspoon of paprica;bead c rumbs;
5-1 tablespoon of butter;
6-chopped parsley & onion.
PREPARATION:
1-Remove the bones from a large cooked fish and chop to a fine mince.
2-Mix with 2 beaten eggs, 2 tablespoonfuls of cream, 1 tablespoonful of butter, season with salt, black pepper and 1/4 teaspoonful of paprica.Beat well together with some bread-crumbs;
3-Fill a mold with the pudding and let steam one hour;
4-Then boil the sauce in which the fish was cooked, add 1 tablespoonful of butter, chopped parsley and chopped onion.
5-Season highly; boil and serve with the pudding.Garnish with prawns.

MADRAS BAKED FISH

1-1 fish;
2-salt;
3-pepper;
4-green ginger;
5- curry powder;6-1 onion (sliced)
6-2 chopped green peppers;
7-1 sprig of parsley.
PREPARATION:
1-Season the fish with salt, pepper, some grated green ginger and curry-powder.
2-Place in a baking-pan with 1 sliced onion, 2 chopped green peppers and 1 sprig of parsley. 3-Pour over some water and hot melted butter;
4-Sprinkle with flour and bake until done.
5-Garnish with sliced lemon and parsley.

COD FISH A LA LYONNAISE

1-Cut cold boiled codfish in pieces;
2- Boil 8 small onions until soft; heat 2 tablespoonfuls of butter.
3- Add the boiled onions, 2 small cold sliced potatoes, the codfish and 1 cup of milk;
4-Sprinkle with pepper.
5- Cover and simmer ten minutes and serve hot.

SWEDISH PIE
1-pie dough;
2-boiled fish;
3-oysters;shrimps;
4-mushrooms;
5-salt & paprica;
6-grated peel of a lemon; juice of 1/2 lemon;
7-1/4 cup of melted butter;
8-1 egg(beatten)
PREPARATION:
1-Make a rich pie-dough; line a deep pie-dish with the paste and let bake.
2-Then fill with chopped boiled fish, oysters, shrimps and some chopped mushrooms.
3-Sprinkle with salt and paprica and the grated peelof a lemon.
4-Pour over 1/4 cup of melted butter and the juice of 1/2 lemon and a beaten egg.
5-Then cover with the dough and let bake until done.
6-Serve hot.
