JAPANESE EGGS


INGREDIENTS:


1-Rice or pasta;


2- 6 eggs;parsley;


3-tomato sauce;lemon juice.


4-chicken stock;bacon,



PREPARATION:


1-Cook some rice in a rich chicken stock; place on a platter.
2- Fry 6 eggs and trim neatly; sprinkle with salt, black pepper, chopped parsley and lemon-juice.Fry the bacon in slices;
3- Put the eggs on the rice or pasta,the fried bacon and pour a little hot tomato-sauce over the base of the platter and serve.

RISSOTTO (ITALIAN)


INGREDIENTS:

1-cup of rice;
2-greated parmesan cheese;
3-tomato sauce;
4-fried veal chops to serve.


PREPARATION:
1-Boil 1 cup of rice in salted water until soft; drain.
2-Then add grate Parmesan cheese and cover the rice with cheese.
3-Let steam in the oven a few minutes;
4-Then pour over some highly seasoned tomato-sauce and some paesley
5-Serve hot with fried veal chops.

BELGIAN RICE DESSERT


INGREDIENTS:


1- 1 pint of milk;

2-Add 1/2 cup of boiled rice;

3-Some currants;

4-The yolks of 2 eggs well beaten ;

5-2 tablespoonfuls of sugar.

6- 1 teaspoonful of vanilla;

7-Bread-crumbs;

8- Sprinkle with pulverized sugar;

9-Some red currant jelly .


PREPARATION:


1-Cook 1 pint of milk;

2-Add 1/2 cup of boiled rice and some currants;

3-Stir in the yolks of 2 eggs well beaten with 2 tablespoonfuls of sugar.

4- Remove from the fire.

5-Add 1 teaspoonful of vanilla;

6-Form into cylinders.

7- Dip in beaten egg and fine bread-crumbs and fry until golden brown.

8-Sprinkle with pulverized sugar and put some red currant jelly on top and serve.

CHICKEN CHOP SUEY (CHINESE)


INGREDIENTS:

1-1 chicken;
2-black pepper;cayenne;lard;
3-onion;celery;
4-bean sprouts;celery;
5-mushrooms;
6-1/2 cup of stock;
7-2 tablespoons of cream and chopped parsley;
8-1/4-chinese sauce;boiled rice.

PREPARATION:

1-Cut all the meat of a chicken into thin strips; season with black pepper, and cayenne, and fry in hot lard.
2- Add some ham, onion, celery,green bean sprouts and mushrooms cut fine.
3- Moisten with 1/2 cup of stock.
4- Add 1/4 cup of Chinese sauce; cover and let simmer until tender.
5-Thicken the sauce with flour; add 2 tablespoonfuls of cream and chopped parsley.
6- Serve hot on a platter with boiled rice.

EGYPTIAN MEAT BALLS


INGREDIENTS:


1- 1 pound of raw beef;



2- salt,



3-pepper;



4-1 teaspoonful of curry-powder;



5- 2 stalks of chopped celery,



6-1 small onion andsome chopped parsley.



7- 2 beaten eggs ;



8- 1/2 cup ofbread-crumbs;



9-Boiled rice ;



PREPARATION:




1-Chop 1 pound of raw beef;



2-Season with salt, pepper and 1 teaspoonful of curry-powder;



3-add 2 stalks of chopped celery, 1 small onion and some chopped parsley.



4- Mix with 2 beaten eggs and 1/2 cup of bread-crumbs,



5-Make into small balls.



6-Let cook in hot butter until tender.



7-Serve on a border of boiled rice and pour over all a highlyseasoned tomato-sauce.

SPANISH FRICASSED SHRIMPS




INGREDIENTS:

1-2 tablespoons of butter;
2-1 onion (CHOPPED);
3-2 cups of tomatoes;
4-1 tablespoom of flour;
5-salt;pepper;parsley;
6-1 yolk egg;
7-Boiled rice;
PREPARATION:


1-Heat 2 tablespoonfuls of butter; add 1 onion chopped and 2 cups of tomatoes.
2- Let fry; then stir in 1 tablespoonful of flour; add 1/2 cup of water; let boil;
3-Add 1 quart of shrimps, salt, pepper and parsley.
4-Let all cook twenty minutes. Stir in the yolk of an egg.
5-Remove from the fire.
6-Put some boiled rice on a platter; add the shrimps and pour over the sauce.
7-Serve very hot.

ORIENTAL STEWED PRAWNS


INGREDIENTS:
1-3 dozens of prawns;
2-1 chopped onion;salt;pepper;
3-1 teaspoon of curry powder;
4- 1 pint of (prwan) stock;(water where the prawn was cooked)
5-boiled rice;parsley.
PREPARATION:
1-Clean and pick 3 dozen prawns.
2-Heat some dripping in a large saucepan;add the prawns, 1 chopped onion, salt, pepper and 1 teaspoonful ofcurry-powder.
3- Add 1 pint of stock and let simmer half an hour until tender.
4- Serve on a border of boiled rice; garnish with fried parsley.

SPANISH STEWED RABBIT


INGREDIENTS:

1-2 rabbits;
2-flour;tomatoes;
3-lemon juice;
4-1/2 tablespoon of red pepper;
5-parsley;salt.

PREPARATION;

1-Clean and parboil 2 rabbits; then cut into pieces.
2- Sprinkle with flour and fry in hot lard. Remove the rabbits.
3-Add chopped tomato and onionto the sauce; mix with flour; let fry; add the sauce in which the rabbit was cooked, some lemon-juice, 1/2 teaspoonful of red pepper,parsley and salt to taste. 4-Cook ten minutes; then add the rabbit and simmer five minutes.
5- Serve hot with boiled rice or mashed potatoes.

TURKISH PUDDING

INGREDIENTS:
1/2 box of gelatine;

1/4 pound of dates;

2 ounces of boiled rice;

1/2 cup of pulverized sugar ;

1 teaspoonful of vanilla;

chopped nuts;



PREPARATION:


1-Dissolve 1/2 box of gelatine;

2-Chop 1/4 pound of dates

3- Mix with the sugar and the vanilla;

4-Ten mix the gelatine ith 1 pint of whipped cream.

5-Mix all well and turn into a mold and stand on ice until cold.

6-Sprincle with chopped nuts.

7-Serve with whipped cream.

INDIA FISH




PREPARATION



1-Slice 1/2 pound of cooked salmon;


2-Then heat 1 ounce of butter in a stew-pan;


3-Add 2 small onions chopped fine, 1 ounce of cocoanut, 2 hard-boiled eggs chopped.


4- Let cook a few minutes, then add 1 pint of milk; let boil up once.


5- Add the fish, 1 teaspoonful of curry paste, 1teaspoonful of paprica and salt to taste.


6- Let cook a few minutes, then stir in 1 large tablespoonful of boiled rice


7- Serve very hot with toast.

HUNGARIAN BEEF STEW


INGREDIENTS:
1-beef;some dripping (fat from the beef)
2-salt; black pepper;
3-3 potatoes;1 onoin;
4-1 cup of water;
5-1/3 teaspoons of paprica;
6-1/2 cup of milk;some flour.

PREPARATION:

1-Cut beef into small pieces. Heat some dripping in a saucepan; add the meat, salt and black pepper;
2-Cover and let stew half an hour.
3- Then add 3 potatoes cut into dice pieces, 1 onion sliced thin, 1 cup of hot water, and 1/2 teaspoonful of paprica.
4- Let all cook until tender.
5-Then add some chopped parsley and thicken the sauce with flour, mixed in 1/2 cup of milk.
6-Let cook a few minutes and serve hot with rice , spaghetti or mash potatoes.
