HUNGARIAN BEEF STEW


INGREDIENTS:
1-beef;some dripping (fat from the beef)
2-salt; black pepper;
3-3 potatoes;1 onoin;
4-1 cup of water;
5-1/3 teaspoons of paprica;
6-1/2 cup of milk;some flour.

PREPARATION:

1-Cut beef into small pieces. Heat some dripping in a saucepan; add the meat, salt and black pepper;
2-Cover and let stew half an hour.
3- Then add 3 potatoes cut into dice pieces, 1 onion sliced thin, 1 cup of hot water, and 1/2 teaspoonful of paprica.
4- Let all cook until tender.
5-Then add some chopped parsley and thicken the sauce with flour, mixed in 1/2 cup of milk.
6-Let cook a few minutes and serve hot with rice , spaghetti or mash potatoes.

ITALIAN ROAST BEEF


INGREDIENTS:
1-BEEF;
2-2 cloves of garlic;
3-salt & pepper;
4-flour;macaroni.


PREPARATION:

1-Cut several deep incisions in the upper round of beef and press into them lardoons of salt pork.
2-Stick 2 cloves of sliced garlic and 1dozen cloves in the meat; season with salt and pepper and dredge with flour.
3- Put in the dripping-pan with some hot water and let roast until tender.
4-Serve with boiled macaroni.

EGYPTIAN MEAT BALLS


INGREDIENTS:


1- 1 pound of raw beef;



2- salt,



3-pepper;



4-1 teaspoonful of curry-powder;



5- 2 stalks of chopped celery,



6-1 small onion andsome chopped parsley.



7- 2 beaten eggs ;



8- 1/2 cup ofbread-crumbs;



9-Boiled rice ;



PREPARATION:




1-Chop 1 pound of raw beef;



2-Season with salt, pepper and 1 teaspoonful of curry-powder;



3-add 2 stalks of chopped celery, 1 small onion and some chopped parsley.



4- Mix with 2 beaten eggs and 1/2 cup of bread-crumbs,



5-Make into small balls.



6-Let cook in hot butter until tender.



7-Serve on a border of boiled rice and pour over all a highlyseasoned tomato-sauce.

POLISH CHOPS


INGREDIENTS:

1-veal chops;

2-salt & pepper;

3-bacon;liver;onions;parsley

4- 1 cup of beef broth.

PREPARATION:


1-Season veal chops with salt and pepper and let fry a few minutes in hot dripping.
2-Remove the chops and cover with a mixture of bacon,liver, onions and parsley minced fine and well seasoned.
3- Then let bake in the oven with 1 cup of beef broth.
4-Baste often and serve very hot.

JEWISH STEWED BRISKET


INGREDIENTS:

1-beef;salt & pepper
2-2 tablespoons of butter;
3-1 chopped onion;
4-1 tablespoon of flour;
5-1/2 cup of raisins1/2 cup of vinegar;
6-1 tablespoon of brown sugar;
7-cinnamon;1 sliced carrot.

PREPARATION:

1-Boil beef brisket until tender, and slice thin.
2-Heat 2 tablespoonfulsof butter; add 1 chopped onion.
3- Stir in 1 tablespoonful of flour until brown. Add the water in which the meat was cooked, 1/2 cup of raisins,1/2 cup of vinegar, 1 tablespoonful of brown sugar and some cinnamon and 1 carrot sliced thin, salt, pepper and a few cloves.
4-Let boil. Add the brisket and simmer fifteen minutes.
5-Serve hot or cold.

ITALIAN TONGUE

INGREDIENTS:


1-1 Tongue;
2-2 tablespoons of butter;
3-1 onion;2 gloves of garlic;
4-1 cup of tomato sauce;
5-1/2 cup of mushrooms;
6-lemon juice;salt & pepper;
7-1/2 glass of sherry wine.
PREPARATION:
1-Boil a beef tongue until tender; skin and slice thin.
2- Heat 2 tablespoonfuls of butter.
3- Add 1 chopped onion and 2 cloves of garlic minced fine.
4-Stir in 1 tablespoonful of flour until brown;
5-Add a little water, 1 cup of tomato-sauce, 1/2 cup chopped mushrooms,lemon-juice, salt and pepper to taste.
6-Let boil. Add the sliced tongue, and 1/2 glass of sherry wine.
7-Simmer ten minutes. Serve with baked macaroni.
